I'M BACK AND IT IS SATURDAY NIGHT!!!!

Well - I've left you alone for a few days! I hope you have cooked something fabulous and will share it with me. By the time I get through cooking, cleaning, 9or going out to each or watching a movie occasionally (just to sleep through the best part or ending) it is too late to write!! I am excited tonight though -- Travis told me where he really wanted to go and he has talked about this area for several years - so he chose this year - we made reservations and if I can work out details here at home, we will be playing old west characters --- and God's Will - I will get my choice next year. I have to say - the place he chose is really neat = the Gage Hotel -- it has like tons of things to do and see in a real old west atmosphere - and guess where it is? == Bet it I tell you you won't know any more than if I hadn't!!!

I hate to admit this but I have not cooked since Monday night! I will cook again -- I bought tomatoes, okra, and peaches today at the Farmer's market! I have some of the igredients ready (tomatillos, onion, jalapenos, bell pepper, poblanos) to make green salsa but I have to buy garlic and fresh cilanto to make it just right! When I say ready -- I have already cooked them and just need to add to the food processor with garlic and other seasonings!!!

Have you tried any of the pie recipes? They are so easy and sooooooo good!!

Tonight I want to give you a recipe for a chocolate cake I have been making for years. There are several versions but with the same results.

CHOCOLATE SHEATH CAKE AKA
CHOCOLATE-CINNAMON CAKE

1 Stick butter
1/2 cup Crisco
4 Tablespoons cocoa
1 Cup water
2 Cups flour
2 Cups sugar
2 eggs
1/2 Cup buttermilk
1 tsp. cinnamon
1 tsp. soda
1/2 tswp. salt
1 tsp. vanilla

Icing:

1 stick butter
4 Tablespoon cocoa
6 Tablespoons milk
1 lb. powdered sugar (I can't find it in a 1# box anymore -- so about 4 cups)
1 cup chopped pecans (optional!)

Bring butter, Crisco, cocoa, and water to a boil. Mix remaining ingredients together and pour warm mixture over them. Stir well. Pour into greased and floured sheath pan (9 X 13). Bake at 375 degrees for 25 to 30 minutes. Twenty minutes before cake is done start icing:

Bring butter, cocoa, and milk to a boil. Add powdered sugar, vanilla, and pecans (optional)and stir well. Pour on cake while hot and cover with foil. Serves 12 to 16 -- unless Travis gets to it first!!!

DON'T LET IT TAKE A ROOSTER TO WAKE YOU UP!!

Did I say last night Monday's were long? -- I should have waited and wrote that for Tuesday. I had a late crisis at work this afternoon, stayed late and then had a Red Cross Board meeting at 6:00. Have you ever had to conduct the election where you were "officially elected Chairman" or anything? IT is very frustrating and embarrasing but that is what I had to do tonight. The exiting Chairman was late to the meeting so guess who?? Not fun - but it is done and I am official!!
I think we have a wonderful board and I am so proud to be a part of that great organization! We had so much to talk about (some of it repetative so we were late getting out. I had Pinto beans cooked (about 2 lbs.) and had planned to make my good cornbread but Travis had given up on me and gone to Traditions and bought some. I have to say - not as good as mine would have been - but it was sweet of him to do that! The beans cooked perfect - put in a tall pan this morning and brought them to a boil. Turned the heat off and covered them for about an hour. Then I drained them and put them in water that had been getting hot in crock pot and cooked on high from about 7:45 untiil about 2:00. When I went home to check on them and let my little angel dogs out I had to add some more boiling water, season them, and turned to warm for the rest of the day. Sad thing is I didn't have any fresh garlic -- yes you read this correctly - I was out -- I had used it all for church last week!! Back to story - out of garlic - I tried to make up and used Penzey's Mural of Seasoning and another brand of Roasted Garlic and Black pepper - plus brown sugar, salt, and Penzey's Fresh Ground Pepper -- but Travis kept saying "they are good, but I don't recognize the flavor -- meaning "I don't like them this way!" So I have tons of beans that I guess the garbage disposal will have a delicious meal on tomorrow night!!!! I didn't make them hot like I usually do = trying for just plain ol' red beans! Next time maybe I will salt and that is all - but how boring is that????

The Unmistakable Sound of a Rooster

But Peter said, “Man, I do not know what you are saying!” Immediately, while he was still speaking, the rooster crowed. And the Lord turned and looked at Peter. Then Peter remembered the word of the Lord, how He had said to him, “Before the rooster crows, you will deny me three times.”

For the general populace there are seven birds that are readily recognizable by their song: 1) the goose that honks,2) the duck that quacks, 3) the chicken that clucks, 4) the dove that coos, 5) the owl that hoots, 6) the crow that caws, 7) the rooster that crows. Each of these is so distinct that the moment one hears them, we know what kind of bird it is.

Other birds are a little more difficult to know to the untrained ear. The Cardinal as he is the first bird you hear on a deer stand on a frosty morning, the whistle of a robin or a blue jay. The chirp of a sparrow and a wren are very much alike.

Interesting, don’t you think, that Jesus would choose a rooster to bring Simon Peter to his senses during that dark night of betrayal and denial? When we say someone is cocky, we are comparing them to a rooster. A person who “struts their stuff” is kin to the barnyard fowl. It seems that the rooster is forever associated with prideful boastful boasting since the night Peter denied the Lord.
But, beyond this, the rooster also symbolizes two other things for us today.

First, he is the herald of a new dawn. When the rooster crows it means only one thing; a new day is at hand. So, while Peter would be stung by the sound that jolted his mind back to the words of the Lord, the sting also carried promise of a new day—a fresh change to walk with Him whose mercies are new every morning.

Second, the rooster was for Simon Peter a messenger with a personal word from God. No doubt many heard the rooster crow that morning, but nobody heard what Peter heard. For in the routine sounds of the ordinary he discovered the God who speaks through donkeys and roosters. And from that day forward, Peter would never be able to hear a rooster again without thinking of this one moment in his life.

A moment of devastating failure---and of great forgiveness. A moment of death and resurrection; certainly for Jesus---but also for Peter.

I will never again hear a Rooster crow but what I don't think of Peter and examine myself!!!

I don't think I've given you the recipe for "Crock Pot Beans" - I guess because it is so long -- but believe me - worth it. I made 3 recipes of them and they were really delicious -- so please copy this and try them!

CROCKPOT BEANS

¾ lb. bacon, browned and cut up in small pieces
1 c chopped onion
1 green pepper chopped
1 1lb. can of pork and beans
1 1lb. can of ranch style beans
1 1lb. can of kidney beans drained
1 1lb can of pinto beans, drained
1 1lb can of garbanzo beans, drained
1 1lb. can butter beans, drained
1 1lb. can of northern beans, drained
1 cup catsup
¼ cup brown sugar
1 TBSP Liquid smoke
3 TBSP Vinegar
1 tsp. salt
Tabasco (several dashes to taste)

Brown bacon; drain off fat and save. Put bacon in crock pot. Saute onion and pepper in bacon fat; drain and put in crock pt. Add beans and other ingredients to crock pt. Stir well Cook on LOW for 4 to 6 hours. Will hold longer.


These were given to me by Donna Skorheim - the Bank's Chaplain and she is one of the most precious women I have ever met. She said when she takes them to her church she always runs out -- and with three times the original recipe - I ran out. So Enjoy!!!

Here is a very cute story I received today -- definitely worth sharing!!!

AIN'T

He was just a little boy,
On a week's first day.
Wandering home from Bible school, And dawdling on the way.

He scuffed his shoes into the grass; He even found a caterpillar. He found a fluffy milkweed pod, And blew out all the 'filler.'

A bird's nest in a tree overhead, So wisely placed up so high.. Was just another wonder, That caught his eager eye.

A neighbor watched his zigzag course, And hailed him from the lawn; Asked him where he'd been that day
And what was going on.

'I've been to Bible School ,'
He said and turned a piece of sod. He picked up a wiggly worm replying, 'I've learned a lot about God.'

'M'm, very fine way,' the neighbor said, 'for a boy to spend his time.' 'If you'll tell me where God is, I'll give you a brand new dime.'

Quick as a flash the answer came! Nor were his accents faint. 'I'll give you a dollar, Mister, If you can tell me where God ain't.'

Why aren't we all that quick with a defense of our Lord? I love that!!

MONDAY IS A LONG, LONG DAY!

Ok - I need to update the Table of Contents to the recipes -- I have added so many that are not on the list!! When is there time to do everything you need to do?? If anyone has the answer -- please, please, please let me know!! My fingers keep hitting the wrong keys!! It is after 10 pm so maybe that is why!!

Has your Mother ever told you that you have "lost it completely?" Well my Mom did today and this is more than once she has either dreamed or imagined that she told me something or completely forgotten that she said something really rude. Bless her heart I do try to remember her age -- but I am not someone that can just totally accept and ignore something wrong so we usually crash but I am trying hard to "just let it go" and accept it came from someone as old as she is! My sister on the other hand can just ignore it and keep on trucking!!!

Oh have you tried the new Mongolian Grill "Genghis Grill" on Troup Highway across from Super One? We tried it tonight and it was really good. It was strange -- you pick out what you want them to cook for you -- the meat, the veggies, the spices, the sauce, the rice or noodles! Really an experience -- I picked out lots of hot stuff and peppers but Travis and Michelle went more mild. Mine was really good and I only got enough to eat tonight but Travis and Michelle brought home large servings. The good thing is there is no MSG!!!

Tonight I want to give you the other two pies I made for last Wednesday's meal.

PINK LEMONADE PIE

1 Can Eagle Brand Milk
1 6 oz. Can Pink lemonade, slightly thawed
1 -9 oz. carton Cool Whip
1 Graham cracker crust

Mix all ingredients until smooth and pour into pie shell. Chill until firm and keep refrigerated.


LEMON ICEBOX PIE

First off - I just have to say the name proves how old my cookbook is. ICEBOX????

1 - 8 oz. pkg. Cream Cheese

1 Can Eagle Brand Milk (use the store brand - it is much less expensive and just as good!!)
1/3 Cup fresh lemon juice and grated rind
1 Graham Cracker Crust

Beat first three ingredients with electric mixer. Pour into crush and refrigerate!!


Wonderful fresh taste and even my Mom loved it!!!

I have two things to do:

First - I want to thank Kathy Haney for letting me know when she has used a recipe -- it makes me feel like the late hours are all worth it and second - I just want to ask -- Do any of you ever try these recipes that I so dilligently try to bring you???
Kathy and my sister are the only ones who tell me and if they enjoy the recipes I will continue to bring them!!! Just curious???

My sister said tonight that she did the Okra and onions with a little jalapeno and that it was wonderful! Now that is what I like!11

RECIPES, RECIPES, AND RECIPES

Good evening! Today has been a very full day. Church this morning - a shower at 4:00 at West Erwin -- it was wonderful to see so many friends from long ago and get to visit. There was to be another shower at church this evening after services -- it was a fellowhip and shower so I made sandwiches and pie for it before I left for the 4:00 shower. I had not planned to stay long but I visited with so many old friends that I had to hurry and pick up Travis, the gift and food to get to church on time! I am so happy to be back home with nothing to do but write in my blog!!!

I told you last time I wrote I would give you the stewed potato recipe - so here we go!

STEWED NEW POTATOES

Quantity can depend on your eaters and how many!

5 or 6 small new potatoes, partially scraped
Boil in water until fork tender and some of the water has cooked down. Leave about 1-1/2 to 2 cups of water in pan. Salt and pepper to taste or use about 1 tsp. salt and 1 tsp. Penzey's Fresh Ground Blackpepper (or whatever you have until you can get some Penzeys! Then to have the creamiest potatoes take about 1/2 cup white flour and stir into about 3/4 cup ice cold water - stirring until well blended. Gradually pour the flour water mixture into the potatoes, stirring gently until thickened. Add 1 pat of butter. Cook until you have a good thick gravy - stirring and careful not to scorch! If it is a little too thick - add a little milk or half and half to thin slightly. (You can substitute corn starch for flour but they are definitely not as creamy and tasty!!)

Travis loves these things with cornbread!!My dad also could eat them until he practically burst! This is a very old recipe Mother got from Dad's mother over 60 years ago! I looked in several cookbooks and there was no sign of it!!!

We had a great sermon today on the joy of marriage and then in class we are watching a video about marriage. You may be thinking "why would someone who has been married as long as you have go to something like that?" Well you are never too old to be reminded about how men and women are different and have different needs and we need to be like Christ and be a servant to our spouses! See if we both do that with Christ as our center - we will both have our needs met! The guy that speaks in the video is funny -- he says sometimes men can act like jerks and sometimes women can act like jerkettes! Today - he said he was going to tell all of us women a secret that would help us in our marriage. He said men are STUPID and we have to be very specific with them! I am so guilty of saying I want to go someplace but won't say where so as a rule we don't go any place!! I told Travis after class he was probably the only person that could tell someone they were stupid and them like it!! It is a great class!!

Today for the shower I made another Blueberry Pie! It is so easy and really good - I suppose it is because both times I've mad it - it disappeared!

BLUEBERRY PIE

1 Can Eagle Brand Milk (I used the cheaper store brand and it is just as good!)
Juice of 2 lemons or 1/4 cup lemon juice
1/2 pint whipping cream
1 Cup of pecans
1 Can of blueberries
1 pie crust - either baked or graham cracker crust (which is what I used)

Drain blueberries. Mix condensed milk with lemon juice and 1/2 cup of the whipping cream (not whipped). Stir in pecans (it says pecan halves but I chop mine) and drained blueberries. Pour into crust. Top with the remaining cream, whipped with about 3 tablespoons of sugar. Store in refrigerator until served. Serves 8. This may be made the day before or several hours before serving. Enjoy!!


Here is another one of the pies I made for Wednesday's meal last week.

MAMAW'S QUICK PIES

1 Can Eagle Brand Milk (again I used store brand)
1 - 13-1/2 oz. carton Cool Whip
3 Tablespoons lemon juice
2 Small cans crushed pineapple, drained
2 Graham Cracker crusts

Combine ingredients and pour into crusts and chill at least two hours. Makes 2 pies and Serves 16. VERY EASY!!!

LET'S COOK, COOK, COOK!!!

Ok girls and any guy that is wise enough to check out my blog -- let get cooking! Tonight I prepared an all veggie dinner and it was pretty awesome. I did stuffed eggplant and before you sneeze and say "I don't like eggplant" I guarantee you have never tried it this way! Then I did yellow squash, okra with onion and jalapeno, fresh tomatoes sliced, and stewed potatoes. Of course I didn't eat the potatoes because of the carbs but the rest was so good! So how did I cook all of it - well here is how:

Stuffed Eggplant

4 small eggplants
1 very small onion (or part of one)
1/8th of hot jalapeno
1 tsp. salt
1/2 tsp. pepper
1/4 cup fine ground bread crumbs
2 very small tomatoes chopped
1/8 tsp. sugar
Boil eggplants until fork tender - remove from water and allow to cool until easy to handle. Slit one side open and remove the insides. Sprinkle the inside of the hulls with salt. Combine the eggplant pulp with remaining ingredients - mixing well. Stuff with pulp mixture and place in 400 degree oven for about 10 to 15 minutes. Top with a tad of cheese on each and return to the oven for about 5 minutes! VERY GOOD!!!

ALL NATURAL YELLOW SQUASH CASSEROLE

6 to 8 small yellow squash
1 medium onion, chopped
1/8th of jalapeno
salt and black pepper to taste
1/8th tsp. sugar

Wash and cut squash into 1 inch chunks (don't measure - just guesstimate!); place in saucepan; Chop onion and jalapeno and add to saucepan. Fill with enough water to cover veggies and bring to a boil. Turn down heat slightly and cook until fork tender. Drain completely and add salt, pepper, and sugar. Stir until squash starts to break up (but leave plenty large chunks!) Pour into baking dish and sprinkle
with bread crumbs and shredded cheese. Bake at 400 degrees for about 15 minutes.


I know so many of you will go ugh - I don't like Okra either. Please try this and then say that!!

OKRA AND ONION RINGS

Take however many Okra pods you need -- I used about 20 pods-- wash and slice into large chunks (cutting each Okra pod into about thirds)
1 large onion - cut into rings
1/4 cup corn meal
1/2 tsp. baking soda
a few slices of fresh jalapeno chopped up (to taste)
1/4 cup flour
salt - 1 tsp.
1/2 tsp. black pepper
2 tablespoons olive oil
Combine Okra, Onion and Jalapeno in medium size bowl, and dust with baking soda, flour, salt, black pepper and corn meal. Heat olive oil in skillet and add seasoned vegetables. cook on medium high - stirring often and turning until fork tender and parts of it crusted and turning brown. sERVE ALL OF THIS WITH CORNBREAD!! DELICIOUS!!!

I also had done stewed new potatoes and I will give you the recipe but it is 10:15 and Travis has given me a huge list he wants typed so I am going to have to continue this later!!

THE DINNER IS OVER AND I AM THANKFUL

Good late evening!!! THE MEAL is over and I am so thankful! Thankful we fed as many people as we fed and that everything was as close to perfect as I could get it! The room was pretty -- red table cloths and Tyler roses on each table in my crystal vases - of course some of them were just glass!! Brisket was tender - there was a variety of rare and done;the best chicken legs we've ever grilled; wonderful beans -- I will give you the recipe soon; and 11 of the most delicious pies! All refrigerated - two of each - Lemon Icebox, Pink Lemonade, Pineapple, Strawberry and Blueberry with pecans. I will share recipes -- they were all delicious -- I managed to taste all of them even though I didn't get a piece of any!! I am so thankful I lived up to my reputation and it is over!!!

Once upon a time, (by this you know there is a story coming) down out of Logansport Louisiana, there lived an old Bull Frog by this creek. Oh, how he loved that old creek, he would sit oh the bank and catch flies and visit with his other frog friends for hours. One day as he was enjoying the life of ease, up walks a scorpion. Mr. Frog, I sure need to go to the other side of the creek, would you please let me get on your back and take me across. The old Bull Frog said, are you nuts, you will sting me and I will die! The scorpion said, are you sick? Mr. Frog if you die you will sink, and I will drown, Oh you foolish frog. I never though of it that way, hop on, I will take you. About half way across the scorpion popped his stinger in the frogs back. The frog said, “Why did you sting me, don’t you know that now we will both die?” Yes I know, but I just could not help it, you see, it’s my nature!

Covetousness, discontent, and murmuring are as natural to a man as thorns and brambles are to the soil. You need not sow thistles, Johnson grass, choke grass, and brambles; they just come up naturally. But the precious things of the earth must be cultivated.
Contentment is one of the flowers of heaven, it must be cultivated. It will not grow in us by nature; it is the new nature alone that can produce it. We must be specially careful and watchful that we maintain and cultivate the grace which God has sown in us. Paul says, “I have learned…to be content;” as much as to say, he did not know how at one time. It cost him some pain to attain to the mystery of that great truth. He was an old, grey- headed man, waiting for his death, in a prisoner shut up in Nero’s dungeon at Rome. Do not think that you can be content with learning or learn without discipline. It is not a power that can be exercised naturally, but a science to be acquired gradually. We know this from experience. So, my dear reader, hush that murmuring, that’s the old nature. Let God take control and bless you with the New Nature!

I told you I would tell you about my trip to Winona on Friday night and I will - just not tonight! Tonight I will give you the recipe for the Strawberry Pie II I made for tonight!!

STRAWBERRY PIE

1 Pkg. 8 oz. cream cheese
1 cup sugar
1 small package frozen strawberries
1 large container Cool Whip
2 graham cracker crusts

Combine softened cream cheese and sugar. Beat until creamy and then add thawed strawberries with juice. Combine well. Fold in Cool Whip and pour into 2 Graham Cracker Crusts. Chill at least 2 hours. (May be made the night before and chilled overnight-- Just as good!!!

Yesterday a lady came to see me at the bank and it seems the mailman had returned her mail "UNDELIVERABLE" and she had not received a bank statement in four months. (I told her should should have called the bank the first weekend that occured.) Short story - she had $840.00 in overdraft fees so I refunded $420.00 - an heard of amount for a refund where we (the bank) did not make the mistate but I felt really sad because her only income was SSI Disability for about $800 per month!

GOOD RECIPES - THE TOPIC OF THE EVENING

My it seems like ages since I last wrote! I hope you haven't given up on me!! It has just been a very busy Friday and Saturday and time slipped away! Our neighbors are from Porta Rico and they have had tons of company all weekend. He is home from Afganistan and will be going back and there has been some happy celebrating going on! They are really neat people and so gracious and friendly and hospitable. I took them a peach cobbler last night and today I cooked them my famous pound cake and an apple pie. Of course just when you really want to show out a little, something invariably happens to plant you firmly back on the ground! This time the cake I've probably made 50 of broke as I was getting it off the stem in the tube pan. It broke half into. It is too expensive and it takes an hour and half to cook so there was no way I was going to start over. I just pushed it together and decided to cover the top with powdered sugar to disguise it. Well you've probably guessed -- that is right I was out of powdered sugar. I bet that is the first time that has happened in years and years! So I just took it on over broken!!

It is so rich you can almost see an extra pound growing on you when you eat it so I never keep one at home. But for a delicious cake here is the recipe:

PHILADELPHIA CREAM CHEESE POUND CAKE

3 Sticks butter
8 oz. cream cheese
6 eggs
3 cups sugar
1/2 tsp. salt
1 tablespoon vanilla (the orginal calls or only 1 tsp.)
3 cups flour

Cream butter, salt and cream cheese in a large mixing bowl. Gradually add 2 eggs and sugar and vanilla. Add flour and remaining eggs (one at a time) alternately, ending with the flour. Blend thoroughly. Pour into a well greased and floured bundit pan. Bake at 300 degrees for 1-1/2 hours. Serves at least 12! (An easy to make, moist cake!)

Well - as I typed this I realized my mistake. I cooked it in the tube pan instead of a bundt cake pan and that is why I could not get it off the tube without breaking it! DUH!!! It deserved to break if I was that dumb!!

Our neighbors invited us to join the party last night. He had cooked Pork shoulder and it was so delicious. I asked how he did it and he just said - "next spring when I am home for good, I am going to roast a pig (in the back yard) and you will see then how I season it!!" So -- I did not get the recipe! The potato salad was good too. It has green olives and apple in it and was not filled with mayo or mustard! I don't know that trick either! Guess we can all learn!!

I have this cookbook called "GINGERBREAD and all the trimmings!" I bought it in 1988 at a tour of old homes in Waxahachie. The Waxahachie Junior Leage was selling them and I'm sure I have used that one cookbook more than any other. I have not tried one thing in this book that was not excellent!! The cake recipe came from that book.

I bought another 1/2 bushel of peaches and shared with my sister. We each got 30 peaches. They are so delicious. I stated that I had made my neighbors a peach cobbler. (I know Travis is feeling neglected!!) Here is the recipe I used:

HOMEMADE PEACH COBBLER

This version fits a 9X12 dish!

2 bought roll out pie crust (the ones in the box already rolled and you just unroll them!)
7 Fresh peaches, sliced
2 Cups sugar
1 Cup water
1/4 tsp. cinnamon
2 Tablespoons butter
2 Tablespoons sugar
1/2 cup ice water
2 heaping Tablespoons corn starch
1/4 tsp. salt

Unroll the first pie crust and place on floured cutting board and roll crust until it will fit your dish. Bake at 400 degrees for about 12 minutes or until nice and golden brown.

Place sugar, water, peaches, and salt in saucepan and bring to a boil. Cook two or three minutes until peaches start to tender. Stir the corn starch in the ice water and while stiring peaches, gently pour corn starch water into peaches. Turn heat down and allow to cook for a few minutes to thicken slightly. Add butter and stir in. Pour into crust. Sprinkle lightly with cinnamon. Roll out the other crust to fit top of cobbler and then gently place on top of the peaches. Cut a few slits in it for air to escape, dot with a little more butter and sprinkle with sugar.
Bake at 400 degrees until top is brown and cobbler starts to bubble.

It is delicious served alone or with ice cream!!

WATCH WHAT YOU SAY!!!

Can you believe this is the 137th Post I've made on Jon Carole Cooks? I can't - especially when I look at all the recipes I've not shared!!

We had the most wonderful evening tonight. My sister picked up Michelle and Travis and I actually went out to dinner. The parents of the bride that I just did the reception for invited us to dinner. It was so sweet but totally not expected or warranted! But it was great. We ate, we visted, and really got to know each other a little bit more! They are a wonderful couple that have raised their children right there at Shiloh and who still work dilligently serving the Lord through their work at Shiloh!! Our meal was great -- anytime I can have Potpourri House's pimento cheese I feel like a queen. I was definitely ready for something good. I had held myself to 200 calories in anticipation of this evening!!!

Have you ever said something and then thought: "Why did I say that" or "That was so stupid of me!"? I know I am guilty of not thinking before I speak! What about you?


A TIME TO SPEAK

There was a logger in Oregon who was out of work because of controversy surrounding an endangered species—the white spotted owl. The woods where the loggers had been working were now declared a natural reserve for this one bird. You can imagine the stir that was created when this logger, Billy, was arrested for shooting the owl.

The press ready to make a national story out of anything demanded swift justice for this murderous beast of a man. The Judge, a childhood friend of Billy was in a real bind. When Billy was brought before him he said, “Billy, I can’t believe you would be so stupid as to go and shoot one of them blasted birds. You know I’m going have to throw the book at you!”

“Yes, you’re Honor,” Billy respectfully replied, “But, first could I tell you why I shot it?”

The Judge agreed, and Billy told his tale. “Your Honor, I’ve been out of work for a few months now, and the only way I can feed my family is by hunting. I was in the woods looking for game—and the only thing I could find was that owl. I didn’t shoot it to break the law; I just needed to feed my kids.”

With that the Judge shifted in his chair and said, “This may change things for you. I’m sure once the Press hears the rest of the story they will understand if we let you off with just a fine or something. But before I call them in here,” the Judge continued, “I’m curious to know—just what does a white spotted owl taste like?”

“Oh,” Billy answered, “It tasted just like an American Bald Eagle.”

It’s better to keep your mouth shut and have everybody think you’re a fool, than to open it and remove all doubt. Solomon wrote, “Even dunces who keep quite are thought to be wise; as long as they keep their mouths shut, they’re smart.” (Proverbs 17:28)

In a day when opinions are buzzing about like a swarm of flies, sometimes saying nothing is the best thing to do!



One of my favorite cookbooks is the Junior Legue of Tyler's "AND ROSES FOR THE TABLE" which they published in 1997. I haven't used it all that much but it is so beautiful with all the fabulous dishes and roses. When I do use it -- the recipes are wonderful.

One of my favorite things is the Pesto Sauce. Pesto sauce is so versatile - you can use it on bread with a slice of tomato and mozerella cheese or in soups, pizza, just you think of it and it can be done.

PESTO SAUCE

2 cups firmly backed basil leaves, washed and dried
1/4 cup Pine Nuts, Walnuts, or Pecans (In Pesto I think it should be pine nuts!!!)
2 to 4 cloves garlic, minced or pressed
3/4 cup freshly grated Parmesan cheese (fresh is always better!)
1/2 cup Extra Virgin Olive Oil

Blend basil, nuts, and garlic until pureed. Blend in cheese. Slowly add olive oil. Store in a covered container topping off the top with Olive Oil.

Try it - I think you will be pleased!!

VBS IS OVER AND HOT DOGS HAVE BEEN SERVED

Good evening! Question!!! Have you ever noticed when you finally get home how fast it gets late? Of course tonight I am so tired -- I need more energy to keep up with my duties!! Tonight we went to VBS's closing ceremony and then served hot dogs from the adorable stand Travis built last year for about two hours. We served almost 300 dogs!!! I think any food that is free will go like hot cakes and these dogs went! It was fun though!! We (Travis and I) love serving our church family and friends!

We are going to partially cook next Wednesday night. Daryl is grilling brisket and chicken and then I am doing the rest. I am doing the most wonderful bean recipe, potato salad, bread and dessert! Should be good!!!

I had so much to say last night and much of it has escaped me -- sometimes that is a good thing!!

I told you the other night that I had broiled our trout, shrimp and veggies and that I would tell you the benefits! Broiling uses a very high constant heat so cooking time is much shorter and you are cooking without grease and any fat or grease cooks out of the meat and drops into the pan filled with a little water. For veggies it gives you a very vivid color and seasoned correctly it is delicious!!


Here is a recipe for Peach Cobbler that would rival the Iron Chef! It is from my Mom and I can speak from experience because she gave us one tonight. I think she does this on purpose because she knows I am dieting!!! There have been many recipes in the paper and magazines but I would put this one up against any of them!!

MOM'S PEACH COBBLER

4 cups fresh peaches, sliced
1 Cup sugar
1/2 cup water
2 tablespoons corn starch
2 Pie crusts

Dish with rolled out crust. Bake at 400 until crust is beginning to be crispy. Remove from stove, Peel, core and slice fresh peaches. Add sugar. Place in a saucepan stirring as needed. Once peaches in water come to a boil, add 2 Tablespoons corn starch to about 1/4 cup water and stir. Pour into peaches and stir. Allow to thicken slightly. Pour over baked crust. Top with other crust, dot with butter and cook until bubbly and crust is brown on top.

GOOD FOOD ON THE MENU

My goodness how times does fly!! I started dinner about 6 PM and we ate at 8 pm. Then I cleaned up so I am getting a really late start!! But I have to say it was a meal to remember!!! Hate to brag but it was so good! Fresh tomatoes, Noonday onion, and fresh Okra. Then I did broiled Trout and shrimp for Michelle and I (and I finally found a fish that did not taste fishy at all and it was so wonderful!) Miraculously it was seasoned just right! Since Travis doesn't like fish I broiled him a thin cut TBone steak. I did not want to pay the price for a great big thick one and he did not need it!! OH - and we had stuffed baby eggplants, tomatoes and cantalope. To Travis' disgust I did not cook cornbread but told him ahead he could go to Traditions and get him some but he said no. The meal was topped off with Angel Food pound cake topped with fresh peaches and cream! I did not eat the cake and cream so I am thinking when I add the calories it will be a good thing!!

Mark's sermon was excellent yesterday even though parts of it made me sad! As you know Travis and I are getting older and when Mark said "GO do the things you've wanted to do -" don't wait until one of you dies and you have to go alone"; "Enjoy life while you can" and "Go have fun!" - I was struck with the thought that that is exactly what Travis and I are doing -- waiting for one to die. Every tme I go to Galveston or Dallas with my sister, Maura and Michelle - I see couples having lunch together, laughing and talking and I just want to scream and run out. Although I love the times my sister and I go places and we have a great time - envy rares its head and I can't help it. Unless it was a bank function - it has been almost a year since we even went out to dinner alone. My sister is always saying she and her husband are "slipping off for dinner or to eat" and that he is "demanding her for the day "- and if she only knew how I crave that!!! I love Michelle with all my heart but I also crave to be with my husband alone and play normal once in a while. It is harder to get away for even the weekend and by the time I arrange for Michelle to stay with someone and get someone to take care of the dogs - I am worn out but believe me - to me it would be worth it!! Oh well life hands us different challenges and with God's help we make it! WHAT WOULD WE DO WITHOUT HIM THOUGH???

Ok - how about the recipe I created as I cooked my Okra and tomatoes?

OKRA AND TOMATO STEW

1 lb. fresh Okra - trimmed, cleaned and cut into thirds
1 onion (I used a small Noonday - it was so sweet and good )- chopped coursely
2 cloves garlic, pressed or minced very fine
1 small bell pepper, slivered
1/2 tsp jalapeno, chopped finely (mine was very hot -- if not so hot use a lttle more to taste
5 fresh tomatoes cut into large chunks
Dash of red pepper flakes
Black pepper and salt to taste(about 1 Tbps. salt and at least 2 tsp. black pepper (Penzey's of course@
1 tsp. sugar
1 tablespoon Olive oil
1 large non-stick skillet and lid

Heat olive oil and add onion and bell pepper. Saute until they are almost tender and add garlic. Almost immediately add Okra and about 2 cups very hot water. Cook until okra starts to feel tender when pierced with fork. Add tomatoes, and seasonings. Contine to cook until all is tender. You will probably need to add another couple of cups of Hot water! (Make sure it is HOT!) Just before serving - put about 1-1/2 tablespoons corn starch in a 1/2 cup ice cold water, stir and add to okra mixture for thickening and binding together. (You can use flour but it is fatening and corn start isn't! Ummmm good!!

Have you bought really fresh peaches yet? I mean the kind that was picked the morning you bought them!! My Mom and I went up to Rozell's nursery on the right just past the Airport on Hwy 64. Of course I zoomed right past it and had to tun around go and go back! They were $25.00 for a half bushel but my sister, Mom and I were sharing so that is not so bad. We got about 14 great big peaches a piece! They are just so good! Mom said today she saw them advertised in Gresham for $12.50 for a half gallon and the way Travis is going after them -- we may have to go again!!!

Tomorrow night I will tell you some secrets to broiling! If done correctly it really is a delicious and healthy way to cook!!

GOOD EATS AND GOOD TIMES

My it seems like a month instead of 7 days -- but it has been a good week! I took my computer and sometimes the internet worked and sometimes it didn't -- and sometimes I was just too busy to stop and write but I figured you needed a break from me anyway.

My sister, Alice, Maura, Michelle and I went to Galveston and stayed at the St Luis and it is very nice and they are so unbelievably nice there! They treat everyone wonderfully!
We had some great meals while we were there -- personally I think they have the best seafood in the land unless it is when you get up in the Maryland area! At Landry's we had the most awesome appetiser. It was like 12 grilled shimp and two big helpings of something similar to guacamole - but better than any I've ever had and I've had it from lots of places! The two things different that I could detect was it had cilantro and tiny bits of jalapeno! I am going to experiment next week!!! The best meal we had was at Fish Tales and Alice and I shared the Beach Platter which was broiled and had two shrimp,two pieces of fish, 2 crab stuffed shrimp (the best ever), and two crab cakes. This was perfect for sharing and it was the most delicious seafood I've ever had! Michelle had Coconut Shrimp and Maura chose mini hot dogs! Children!!! We have learned that to go to Rain Forest Cafe - it is so much better to skip breakfast and go at eleven for "brunch!" You still get all of the sounds, light effects and fun! We again shared and had Fish tacos. The were good but a little dry! My sister had I Hop's Banana Strawbery Pancakes three days in a row for breakfast and then didn't think we should eat the rest of the day! Ha! They had fresh sliced bananas between each of the four pancakes, then topped with strawberry compote and whipped cream!

It rained all but one day --actually came torrential rains but we found lots to do and entertain ourselves with! Something we had never done before! Maura was very disappointed that we did not get to go and spend a day at the beach but she had a ball on the tunnel/slide at the swimming pool!


Now for a little cooking! Do you like Caramel Corn but think is is just too much trouble? Well here is one that is just as good - but much easier!

MICROWAVE CARAMEL CORN

1 Stick butter
1 Cup brown sugar
1/4 Cup white Karo
1/4 tsp. salt
1 tsp. vanulla
16 Cups cooked popcorn

Combine all ingredients except popcorn and vanilla flavoring in an eight cup glass bowl and microwave on HI for 2 minutes; stir and microwave for 3 additional minutes, stirring after each minute.
Add 1 tsp. vanilla, stir. Put popcorn in large brown paper bag (not a recyled bag) and pour syrup over popcorn, fold down top. Microwave 1 minute, then shake bag, microwave another minute and shake bag. Microwave 30 seconds and shake, micro another 30 seconds and shake bag. Pour popcorn in bowl, ready to eat!

Lets see -- that is a total of seven minutes vs about an hour done the old fashion way!!

How many of you are old enough to remember when the Mall had an Orange Julius in it -- I think I remember it was in some corner! Well make this and go back to the "good old days!" And if you are too young to remember it -- try it and see what you missed!

ORANGE JULIUS

1 - 6 OZ. Can Orange Juice
1 - 6 oz can water
1/3 cup sugar
1 Cup Milk (I'm sure they used whole milk back when - but I would use 1%!!)
1 tsp. Vanilla
1-1/2 cups chipped ice.

Combine all ingredients and mix well in blender!

Here is the saying for tonight -- I believe it is self-explanatory!

"Being powerful is like being a lady. If you hav to tell people you are, you aren't!" Thinking about this I would say you could replace the work Powerful with Rich!!!

TOMORROW IS INDEPENDANCE DAY - HOW PRECIOUS IT IS!

Good evening - today was a good day! We went to the Shed in Edom this morning for breakfast and I had a message from the bank's chaplain. I called her back (although she had called at 4 something this morning) and it seems a member of their church, a nurse, had called her because a man at the hospital was dying and he and his family were upset because he is Church of Christ and had never been baptised - and he was afraid to die because of that. They were trying to find a Church of Christ minister to do this for him. They finally found a nurse at the hospital that was from Kilgore and was CoC and he talked to them. I felt terrible that I didn't get the message sooner! I called the nurse that was trying to help them and she said she thought the matter had been settled because the Doctor had said he could not be moved and if he was he would most likely die either on the way or in the water. So sad -- but it reminded me so much of the Wednesday night lesson from Luke about "the last shall be first and the first shall be last!" I am certainly not judging because only God has the authority to do that. (See Luke 13:30)

Tonight I am going to give you the recipe for Strawberry Cobbler that is to die for! It was given to me years ago by Donna Mullins and I made it at church the last Wednesday night I cooked - of course I did it five times over!!

MRS GREEN'S FRESH STRAWBERRY COBBLER

1 Qt whole fresh strawberries
1 cup sugar
1/4 tsp. salt
2 Tablespoons flour
1 Tablespoon butter

CRUST:

1/2 Cup butter
2 Tablespooons sugar
1 Cup flour
4 Tablespoons milk

Wash and hull strawberries. Combine sugar, salt and flour. Sprinkle over berries. Place them in a (the recipe calls for a 8" baking dish -- but I always use a 9X13 and it works perfect-- you would just have a much thicker cobbler with the 8" pan) pan and dot with butter. Top with crust, brush with some milk and sprinkle with sugar. Bake at 425 for 25-30 minutes.

CRUST

When making crust: Mix flour and sugar; use pastry blender to work in butter then add milk. Knead lightly on floured board four to five times. Roll to appropriate size and top cobbler.

This is really easy and so delicious you should make one while the strawberries are good. I bought the large container at Sam's today for only 2.98 and I've made it with just that many! ENJOY!!!


Tomorrow after church I pack for Galveston. Yea!1 I know - it is the Fourth but I tried to get Travis to help me make some plans and he didn't so I guess we will hang out our flag and just pretend it is not the Day of Independence -- the one holiday that should be celebrated most!

I am going to take my computer with me and if I can make it work - I will blog from there!

NEVER HOARD FOR SOMETIME SPECIAL!!

Good late evening!! Sorry for my absence last night but after church we went shopping - to no avail - I was looking for something to wear to work today and the only thing I found was way too expensive. See I need suits - I am picky about the fabric, etc! Any suggestions? I was at Dillards! Then when we got home I had to put all of the crystal away that I had used at the wedding reception and after that it was after 10!

Tonight I am getting an early start - 9:48!! P.M. that is!!!

Here is something I think worth reading and taking to heart! What do you have that you are saving for a "special occasion" -- get it out and use it -- I certainly am!!!

I have a couple of recipes for you!!!

LUSH FRUIT DESSERT

22 Graham crackers, crushed
1/2 cup sugar; 1/2 cup melted butter
Mix together and put into 1 9X13 pan and chill.

Whip 1 whipping cream, fold in 4 cups small marshmallows

Spread half on graham crackers.
Spread 2 cans cherry pie filling and cover with rest of cream.

Sprinkle crushed graham crackers on top and chill!

I don't see why you could not use any fruit pie filling - peach, ect. Just would not be as pretty!!

Oh I am going to skip the next recipe until tomorrow and tell you about the neatest thing!!

My Mom (remember 92) said today that last night her young neighbor came over and said she just wanted to talk about the Bible (Mom had talked to her before briefly) so they talked for about an hour. Mom gave you special verses to read and told her when she felt mad at God she should pray and ask forgivness - or when she was troubled. It was a great visit and Mom is waiting for the opportunity to invite her and her husband to church. See you are never too old to be a missionary for God. I am so proud of her!!!!
