ONE GREAT RECIPE AND WE CAN ALL REST

Good evening -- if I make lots of mistakes tonight it is partially because I am not used to Travis' computer and mine has been taken to a wonderful guy at the bank that hopefully can discern why none of the keys on my computer works!! His keyboard is very sensitive and is very different from mine.

We asked Michelle tonight if she saw anyone she knew today while at work at ETCA and she said "NO" so then then we started naming people and it was "Oh yes -I saw her" and we kept naming people and she kept saying she saw them! She loves it so much but she can't forget her last experience over 15 years ago!

Here is the recipe with the additions I made because I guess "I LIKE IT HOT!"

CHICKEN BREAST LA JOLLA

(Now don't ask me what that means because I have no clue! The ingredients include:
8 Boneless chicken breasts -- or what I used about 16 or 20 chicken thighs)
1 tsp. granuated garlic -- didn't have any so I minced about 3 cloves
1 tsp. paprika
1 tsp. minced ginger*
1/2 tsp. groumd cumin A(I didn't see the 1/2 and used 1 tsp,.)
1/4 tsp-. white pepper (I used to have white pepper and never used it so I threw it away so I used black pepper)
1/4 cup Pineapple juice (Ok - I am lazy - didn't have any pineapple juice so I used apple juice with some rum to sweeten it!)
1/4 cup low sodium soy sauce (HAD IT!)
Then I added: 1 jalapeno minced and several shakes of crushed red pepper flakes

* Minced ginger -- several years ago, one of the produce men at Brookshires was taking down a display at a cooking show I attended and he knew me and gave me a huge chunk of Ginger. I told him I didn't use Ginger that often and he said "Freeze It" and then just use it when you need it. So I froze it and am still using it and the aroma, flavor and texture is wonderful after several years in the freezer! Great advise - John!!!!

By the way - the chicken was delicious and even better (and hotter) the next day!!!!

Did I tell you I am leaving again Thursday for a visit with one of my very best friends - one whom I love dearly and miss so much? Well I am going to Ruidoso, New Mexico and although I feel so bad about leaving my family right now - I need to see her and know I will enjoy the visit. I just wish everyone would be happy for me!


This seems so short---but short doesn't mean "empty" -- it just means I am going to spare you my "ranting" although I think it is all based on morality!

NEEDED THE BREAK - THANKFUL TO BE BACK!

Good evening -- can't believe I am finally on a computer again - well not counting work on Friday! What a day that was - first day back from vacation on a Friday!! But at least I only had to work that one day and then be off a couple. Now I only have three ahead of me and I'm suppose to leave for Ruidoso, NM for a short visit with my friends, Mary and Jack!

Travis and I had a great time in West Texas - a totally different world - where things are slower, much more relaxed, friendlier like all small towns are supposed to be! The most activity we saw was the Border Patrol that was very busy with more people and vehicles and even helicopters. The Gage Hotel was beautiful and we stayed in private rooms off of a beautiful garden and it was great. Really didn't encounter any ghosts though!! ha. At the Gage - we met the neatest lady, Connie. She was the pastry and bread chef at the hotel and at Sul Ross University in Alpine. She was so nice and friendly -- we felt like we had a real friend there! Of course Travis did - she slipped him homemade cinnamon rolls, fresh scones right out of the oven, and even sent us out a Blackberry Cobbler and Pomegranate ice cream, and gave us cookies to take on our next day's journey. (Every day there was a "journey" because everything is so spread out!) Needless to say - she knows the way to a man's heart -- you know - through his stomach!!! She has promised me her recipe because she makes all kinds of wonderful creations from the one recipe. She gave us tips on where to go and what "not to eat!" The day we were going to Fort Davis, she suggested we stop at the all natural food store and buy bread, cheese, avacado, etc., and have a picnic. Good advice - we had a great picnic up in the mountains!

Tonight at church they had a "Back to School" bash from 4 to 6 for the young people - served hot dogs and everyone else brought chips and dessert. My sweet little niece
wanted to go and I think it is rude to attend anything like that and not do your part and take what they have asked for -- so although Travis and I had really planned on and wanted to go to the new Robert Duvall movie this afternoon, and Maura had said she and her Meme were going shopping so she could spend her birthday money -we had Maura with us - so I went to the store and we made cookies -- I'll give you the easy recipe! Easy especially if you have two precious girls - such as Michelle and Maura unroll all of little Peanut Butter cups and then help press them into the cookies. I also made a very tasty dip (well I think it is anyway!) and took a special bread toast for dipping. So for the second day - I spent it doing for Maura - but that is OK -- I do love her so much and she is worth every second! Yesterday she turned 8 years old and she had told me she wanted me to make her birthday cake. She wanted an Angel Food Cake with white icing (now that was a first - I had never iced an Angel Food Cake - kind of defeats the purpose of fat free Angel Food Cake - but I iced it. Then she wanted it to say "Happy Birthday Maura" in the center -- well - there is no center -- but I managed around the whole in the cake - then she wanted blue icing around it and strawberries around it. Then of course we had to top it off with the tallest birthday candles you've ever seen -- at least 10 inches tall! The cake would not win a "beauty prize" but Maura told her Meme it was the prettiest cake she had ever had. Now year before last her Meme took her to Village Bakery and let her describe the cake she wanted and they did a beautiful job and then last year her Dad had one make that was fabulous -- so I really did get a compliment!! I also made just a plain white cake with icing and "ugly attempt at decorating" so there would be plenty -- but as it is -- most of it could be shared afterwards!!

Tonight at church Mark preached the second great lesson of the day! One of my friends and I were talking about his lessons and how much depth they have and how sincere he is about his faith and living the right way. Speaking of living the right way -- they announced tonight that we had a new sister in Christ and that she had been taught by the 92 year old mother of one of our members. This immediately made me think of the Godly woman my 92 year old Mom is and how she has a young neighbor that she has been studying with. I really think that the Godly women of that age and the era they were raised - made them strong in their faith and sadly - more convicted than we will ever be - to share that faith and pass it on! May God bless those women and give them the strength to continue as long as they are on this earth!

Recipes I promised. You may have all made these -- they are so easy but when you only have an hour - they are a great substitute for a long time-consuming recipe - no matter how great the results.

REECE'S NUGGETS

Preheat oven to 350 degrees.

1 (15 or 16 oz.) roll slice and bake sugar or peanut butter cookies (I used sugar)
1 - 10 oz. pkg. Reese's chocolate peanut butter cups

Slice cookie rolls into 9 slices. Quarter each slice. Place each piece in a minature muffin cup. (I did not spray or grease the cookie pans and it was not easy to get the cookies out of the pan. One out of the 60 I made came out without sticking -- SO SPRAY THE PANS WITH PAM BEFORE PUTTING COOKIE DOUGH IN!)
Bake 10 to 12 minutes (mine were ready in 10) and Remove from oven. Place 1 unwrapped peanut butter cup on top of each cookie. Cool slightly before removing from pan. Makes 3 dozen. (I doubled the recipe!!!!)_

Now here is the Spread or Dip I made from my wonderful new SOUTHWEST LITE (Full-flavored, healthy cooking) by ZBob Wiseman. He says "this tasty appetiser can be used as a filling for omlets or wrapped in flour tortillas and then chilled and cut into rounds, or used for dipping" as I did tonight. I thought they had said to bring chips and dips -- but mine wa the only one I saw so guess I misunderstood!

PACO'S CREAMY MANGO DIP (Really called Paco's Shrimp and Creamy Mango Dip)

1/2 cup chopped red bell pepper
8 oz. Lowfat cream cheese
1/2 Cup lowfat cottage cheese
1/2 med. onion, chopped
2 Tablespoons low-fat evaporated milk - I didn't have any so I used 2 Tbsp. fat free cream
1 Tsp. salt or he said "salt substitute"
2 Tbsps. minced ginger
1 small jalapeno chile or serrano chile -- I used two jalapenos and added about 1/4 tsp. crushed red pepper
1 Mango - peeled and coarsely chopped
1/2 cup chopped fresh cilanto

NOTE: I ADDED 2 CLOVES GARLIC, AND THE RECIPE CALLS FOR 30 MEDIUM SHRIMP, COOKED AND COARSELY CHOPPED AND TWO MANGOS - BUT I LEFT OUT SHRIMP AND DID ONE LARGE MANGO!!!

In a blender, combine the red bell pepper, cream cheese, cottage cheese, and all the other ingredients except mango and cilantro (and shrimp if using). Blend until smooth. Fold in mango, cilantro (and shrimp if using!)

Refrigerate for 1 hour or longer. Serve immediately. Makes about 2 cups without shrimp and about 3-1/2 cups with shrimp and extra mango.

Here is the good part -- even with the shrimp -- Calories are only 14 for about 2 Tbsps.

Tomorrow I want to share a chicken recipe that was in this new book and how great it was -- although once again I added a little to it! Isn't that what all great cooks do?

Now for my soap box for the evening. I rudely forgot to silence my phone and I had a call during church tonight. I rushed out to quiet it and take the call. When I came back in I sat down in the back -- should never have done that. Shocked is all I can say! I know I could be all of the kid's grandmother but I'm not very "old fashion" at all - but hopefully I am Godly enough to recognize "trouble on the horison" or immoral behavor or just plan 'inatentiveness or disrespect for the preacher and other members.' One little girl was sitting in short shorts with her legs up in the seat spread apart and some little boy had her hugged up and every once in a while you got the idea he was doing something inappropriate - especially for a "Christian Girl" sitting in church because she would giggle and wiggle around. The rest of the girls behind her, on her row, and behind the row I was sitting on - was texting during the whole sermon. You know you read of the the past and in lots of places, people have to "check their guns at the door" -- parents should take up cell phones before children are allowed in church with them - the church might have to enforce "checking the cell phones at the door." Now - tell me -- how could they tell you one thing the preacher said if they are so busy texting and looking to see if they got one back?? I can just hear them and perhaps some of the parents saying "well, she is just an old lady!" Well I may be older than them -- but I know what is right and what is wrong and that never changes! There was another lady sitting there and after church she asked me "Are you sorry you sat down here?" and sadly I thought "Yes, I am!" Preacher - Elders - talk to these parents before they are coming to you with bigger problems!!!

DON'T LOOK DOWN ON THE DOWN AND OUT - WHO KNOWS WHO YOU MIGHT KNOW THERE?

Wow - my how time flies when you are having fun or cooking! Actually I was just mixing!! To call it cooking - I think you have to have pot on the stove! Tonight I made the recipe I posted for MaMaw's Quick Pineapple Pies -- well I think I posted it! I made it to take to the birthday breakfast because even though I am supposed to be off - I have some work that I have to do -- and one of the birthdays being celebrated is Amanda's - one of my assistants. Tonight I added about 1/2 cup chopped pecans to the recipe and it improved 100% - so if you decide to make this simple and easy and delicious recipe -- add pecans -- and don't worry that the container is only 12 oZ. - not 13-1/3 ounces. The recipe makes so much that it overflows in two 9 inch graham cracker crusts -- you actually would have plenty for the larger crust - but I had bought the 9 inch so I filled them and then gave Travis a bowl of the filling and he loved it!! So TRY THE PIE!!!(Note: Friday - Later I realized I had forgotten to put in the 3 Tbls. lemon juice but thought well it tastes good without it! Don't do it unless you want to eat it with a spoon. I found out the lemon juice is what makes it set up and be a nice slice of pie! It was good as pudding!)There I've confessed I make mistakes and learn lessons every day!

THis week has been one of those that you never care to repeat! THere are some crazy people out there just waiting to express their opinion - or anger on someone. I think we have had our share at the bank this week - and they sure made it easy for me to get excited about vacation time - even if it is in Marathon, Texas. I am excited - I just hope there is an adventure there!!!

Oh my gosh - I have a story for you tonight that will make you want to cry or well - it did me. It is entitled "Who Cares?"

WHO CARES?

Who really cares? His was a routine admission to busy Bellevue Hospital. A charity case, one among hundreds. A drunken bum from the Bowery with a slashed throat. The Bowery…last stop before the morgue.
The derelict’s name was misspelled on the hospital form, but then what good is a name
when the guy’s a bum? The age also incorrect. He was thirty-eight, not thirty-nine, and looked twice that. Somebody might have remarked, “What a shame for one so young,” but no one cared.

His health was gone and he was starving. He had been found lying in a heap, bleeding from a deep gash in his throat. A doctor used black sewing thread to suture the wound. Then the man was dumped in a paddy wagon and dropped off at Bellevue Hospital, where he languished and died. But nobody really cared.

A friend seeking him was directed to the local morgue. There, among dozens of other nameless corpses, he was identified. When they scraped together his belongings, they found a ragged, dirty coat with thirty-eight cents in one pocket and a scrap of paper in the other. All his earthly goods. Enough coins for another cheap bottle of wine in the Bowery and five words, “Dear friends and gentle hearts.” almost the words of a song, someone may have thought.

Which would have been correct, for once upon a time that man had written the songs that literally made the whole world sing. Songs like”Camptown Races,” “Oh! Susanna,” “Beautiful Dreamer,” “I Dream of Jeanie with the Light Brown Hair,” “Old Folks at Home,” “My Old Kentucky Home,” and two hundred more that have become deeply rooted in our rich American heritage.

Today, some of these forgotten souls are in prison. Some in hospitals. Some in nursing homes. And some silently slip into church on Sunday morning, confused and afraid.

Do you care? Enough “to show hospitality to strangers,” as Hebrews 13:2 puts it? It also says that in doing so, we occasionally “entertain angles without knowing it.”

Angels who don’t look anything like angels. Some might even look like bums from the Bowery, but they may have a song dying in their hearts because nobody knows and nobody cares.

Deep within many a forgotten life is a scrap of hope, a lonely melody trying hard to return.

Ok - on to happier thoughts. Tonight when I got home there was a box that was recognizable - from a publishing company and I started to just leave it in the box and refuse it -- but something was strange about it. It had an envelope on it instead of a label. So I slipped the letter out the end - not disturbing the envelope. and SHOCK OF SHOCKS! Taste of Home was sending me a complimentary copy of their latest cookbook, EVERYDAY SLOW COOKER AND ONE DISH RECIPES" because my recipe was on page 126. Even though I was excited I was thinking "let it be a different recipe because my Santa Fe Chicken has already been in two other cookbooks. God didn't hear me or I didn't ask in time -- or it was just meant to be - the recipe on Page 126 is for Santa Fe Chicken. One thing about it -- they are really impressed with the recipe or just getting every recipe that fits the title!!
Disappointed? YES! Discouraged - NO! I do think I will write them, thank them and then tell them I have sent in many other equally good or even better recipes! But in the meantime - I can say I have been published three times by a major player in the magazine field! HA!

The bank just published its sixth Southside Bank Recipe book. I have them all and to me - the covers have gotten prettier and prettier and the best looking by far is the one I just got today ,but my very favorite is the first one! I use the recipes in it reguarly. The new one is beautiful - hard back and ring binder, but the contents just aren't the same -- I think because some of the older employees that were such fantastic cooks, have retired and these new girls need to learn there is more out there than hamburger meat!
I am sorry if that sounds tacky because there are some good recipes and I am glad they are learning to cook! Go girls - keep up the good work!! Here is one of them:

CHICKEN FRIED RICE

1 small carrot, finely chopped
1 celery rib, finely chopped
3 Tbls. oil (Canola or Olive oil please)
4 Cups cooked instant rice
3 eggs beaten
2 Cups cubed, cooked chicken
1/4 Cup chopped green onions
2 Tbls. soy sauce

In a large skillet, stir fry carrots and celery in oil for 5 minutes or until crisp tender. Add rice; stir fry for 3 minutes or until heated through. Make a well in center of rice; add eggs. Stir fry for 2 to 3 minutes or until eggs are done. Add remaining ingredients and stir fry until heated through.

Ok friends - I am about to pack it up and head to the West and I don't mean Wyoming (I wish) but to West Texas - Marathon,Alpine, Marfa, Ft Davis Mountains and Big Bend.
I am taking my computer but who knows if they have internet capabilities in Marathon or not -- or cell ability -- oh well - I hope to buy a great pair of boots -- since all I am taking are sandals and well - guess I should throw in the tennis shoes! One great thing -- it is cooler -- in the 80's during the day and cold at night -- so I am going to pack some warm clothes too!!!

NEW RECIPES AND VERY LITTLE ELSE!!

Good evening or morning or whenever you are reading this --I am just grateful you are! It is late - so I am going to keep it short - well - I plan to unless something just comes floating through that I have to tell you!
Last night I spent over $20 buying the things I needed for Chicken Salad and bread.
It was wonderful - even better today - but Michelle and I ate 1/2 sandwich and Travis ate only one. I told him he could take it to work for his little crew but he didn't - so I gave it to my sister who is having a horrible reaction to some medicine she took. Tonight I decided not to cook - but I did make an absolute delicious dessert! It is like I was inspired by my Mom and the heavens above. I call it:
BLACKBERRY COBBLER PIE

1 Box - 2 crust pie crust, room tempature, ready to roll out to fit pan
2 Ccups blackberries - either frozen or fresh
1-1/2 cups sugar
1 Cup water
1/4 tsp. salt
2 pats butter - thinly sliced, divided
2 heaping tablespoons corn starch,
1/4 cup ice water
Preheat oven to 400 degrees.) Roll out one crust larger than pan. Put into 9 inch pie pan dusted with flour, trim and bake for about 8 minutes. Put blackberries in saucepan with sugar, water, and salt and let start to boil. Add small pieces of the crust that was cut off from pan and drop into boiling mixture. When boiling well, add cornstarch to ice cold water and stir into berries. When thickened - add butter and pour into crust. Top with remaining crust, crunch the edges, cut small slits in top and take a tiny sliver of butter and rub on top and sprinkle with sugar. Place in oven and bake at 400 degrees for about 20 - 30 minutes until golden brown and bubbly from inside. I know I brag a lot on some of the recipes I give you but this is absolutely delicious!!! I took my Mom a piece this morning and she called to say the scraped the dish - it was so good! Now that is a compliment coming from her!!!

Note: I started this last night and some strange sentences was coming out on the computer so I decided I had better wait until tonight to finish this!!!

Here is another recipe for you to try:

EASY CHOCOLATE ECLAIR SQUARES

1-3/4 Cup Cold Milk
1 Pkg. (4 serving) Jello Instant Vanilla Pudding Mix
1 - 8 oz. Container Cool Whip thawed
22 Honey Maid Honey Graham crackers
3 Tablespoons butter
2 Squares Bakers Unsweetened Baking Chocolate
2 Tablespoons Cold Milk
1 Cup Sifted powdered sugar

Pour 1-3/4 cup milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 minutes. Gently stir in whipped topping. Layer 1/3 Graham Crackers and 1/2 of whipped topping in 13 X 9" pan. (You can break crackers as you need to to make fit Place softened butter, chocolate, and two tablespoons butter in small pan; cook on low heat until chocolate is completely melted and mixture is blended. Gradually add sugar, stirring until well blended. Spread over graham crackers. Refrigerate several hours or overnight. Store leftover in frig. Makes 24 servings!!

Now you have two new and exciting recipes!

How was your day today? Mine was busy with a few loan requests and many calls from tellers about possible holds on checks being deposited and such like. I worked late today working on a report fine was supposed to be in last Friday and there was just no way!!! Yesterday was the day of stange people! We have those ever so often!!! I am just counting on making it through tomorrow if GOd sees fit to let me see it through tonight and then I will be on vacation and Gage Hotel - here I come!!! I have never been so ready for a break!!!

SUNDAY - A DAY OF BLESSINGS AND LOVE

Sunday night - another two good lessons even from someone besides our regular preacher! Both lessons were excellent and had some worthy points! Tonight we went to Newks with another couple from church and it was great to get to go fellowship with someone we really admire and respect! Travis had a chicken salad sandwich that was delicious (I tasted)and David had a turkey sandwich that he said had just the right combination of ingredients. Michelle and I shared a Margarita pizza! It was simple but very good too!

I have spent two days out in this hot weather - doing some necessary and some not so necessary shopping. I had misunderstood Travis and thought he said his dress watch had broken and I went and found him a really nice one, bought it for our anniversary next week, amd then looked down this morning in church and he had on his watch --it was his old plastic work watch that broke! I took back the new one today without his ever seeing it. All of the surprises I had for him are falling by the wayside. I sneaked his Bible out and am having it rebound. This morning he was looking for it and knew it had been out in the study where he often reads it - so coming home I told him what I had done! I knew he would worry himself and me to death about where it could be! I think he was very proud I had done it!!
Here is a recipe I will probably make for the next Wednesday night I cook!!

MARBLE BROWNIES

1 Pkg. (20.5 oz.) brownie mix (Do not use mix that includes a syrup pouch!)
1 8 oz. pkg. cream cheese
1/3 cup sugar
1 egg
1 tsp. vanilla
1/2 cup Bakers Semi sweet chocolate chunks

Preheat oven to 350 degrees Prepare brownie mixd as directed on pkg; spread into greased 13 X 9 pan. Beat cream cheese and sugar with electric mixer on medium speed until well blended. Add egg and vanilla and mix until blended. Pour cream cheese mixture over browning batter; cut through with knife several tinmes for marble effect. Sprinkle with chocolate chunks. Bake 35 to 40 minutes or until cream cheese mixture is lightly browned.
Cool and cut into squares. Makes 32!

ANOTHER MILESTONE - 150 POSTS WITH THIS ONE!

Good evening. Got home late - was tied up in a meeting until late and was a little late for another appointment at 4:00 but it all worked out. Of course I was late getting home so we disappointedly didn't get to attend the Primetimer's party tonight (which I helped make the desserts for last night) but we can never attend - we are always just getting home when they start eating or partying or whatever! Maybe in a few years when we retire!!!

Some things on the computer are so bizare -- I had to change Iphones and in the change I lost a game I enjoy in the short spare time I have "Sadoka" and a version of the Bible. I have been trying to repurchase them and put them back on my phone. They show I have an account at Apple but the keep asking for my "security code" and the only one they could be talking about is the one on the back of my credit card. I put in the three numbers that are most often used and it says "invalid" so I put in the whole number and it just shuts me off. I am who they say I am and the credit card is the same one I used for the past year so I am very frustrated - and don't know what to do!!

I had such good intentions for tonight. I had planned to make Sopapilla Cheesecakes for work and one for Travis to take to work but by the time we got home from eating it was just too late. You see - we got a very late start and just got home maybe 30 minutes before I started writing. Another time!!!!

We ate at the new Bruno's and it was the first time I had been there. It is really pretty and the pizza was delicious although the three of us only ate one piece each and broght home about five big pieces.

I am hoping when I go out West next weekend - I will encounter some wonderful recipes that I can share!! My dream is to someday go to either France or Italy and attend a cooking school. It would be such a dream come true -- but guess I'd better not hold my breath!!!

Does anyone in your family like just old fashion Chess Pie? Well just in case, here it is:

CHESS PIE

1/2 Stick butter
1-1/2 Cup sugar
1-1/2 tsp. vinegar
1-1/2 tsp. meal
3 slightly beaten eggs
1 Unbaked pie shell
Mix butter, sugar, vinegar and meal thoroughly. Add eggs. Bake in the unbaked pie shell at 350 degrees until done in the center -- careful to not overcook. After about 30 minutes test with toothpick or tester about every 5 minutes until it can be inserted and come out clean!! This recipe is in a cookbook made several years ago at the church we attended - submitted by Mitzi Wilkinson.

I don't think I have given you this recipe!! It is one I use to make often and now I make it occasionally - but it really is good -- especially feeding a crowd -- maybe this fall I will make it for church!!

CHICKEN SPAGETTI CASSEROLE

1 large chicken - cut up or about 6 to 8 chicken breasts
10 oz. spagetti or 10 oz. Macaroni (we like macaroni because it is easie to eat and gives great flavor!)
1 Can cream of mushroom soup
1 Can cream of chicken soup
1 Can Rotel Tomatoes and Green Chilies (Original)
1 Small jar pimentos
8 Tablespoons ripe olives, chopped
1/2 Onion, chopped
1 Garlic clove, minced or pressed
2 Tablespoons butter or better yet - Olive Oil
2 Cups grated cheddar chees
Salt and Pepper to taste.

Boil chicken in large pot of water until chicken is tender. Remove chicken, let cook, and cut into bite size pieces. (RETAIN BROTH)
Saute' onion and garlic in butter until tender.
Cook spaghetti or macaroni in retained broth until tender; drain, leaving about 1/2 cup of broth.
Add chickn, soups, Rotel, onion and garlic, 4 Tbls. chopped ripe olives, chopped pimentos and salt and pepper to taste.

Pour about 1/2 mixture into greased 13 X 9 casserole dish and cover with 1 cup cheese and slice a few ripe olives over it. Cover with remaining mixture. Top with remaining cup of cheese; slice a few more olives on top. Bake at 400 degrees for about 20 minutes -- until all is hot and bubbly and cheese is melted.

Serve with salad and bread!!

I walked in my office last week and here was a paper on my desk by Chuck Swindoll-- ATTITUDE.
I ask the question in my mind, Did God or my wife put this here? Then I said either way maybe I need a TUDE check. How about YOU, or maybe I need to call your spouse! Well here is the paper.

The longer I live, the more I realize the impact of attitude on life. Attitude, to me, is more important than facts, than the past, than education, than money, than circumstances, than failures, than successes, than what other people think or say or do. It is more important than appearance, giftedness, or skills. It will make or break a company…a church…a home.

The remarkable thing is that we have a choice every day regarding the attitude we will embrace for that day.
We cannot change our past. We cannot change the fact that people will act in a certain way.

We cannot change the inevitable. The only thing we can do is play on the one string we have, and that is our,

ATTITUDE.

I am convinced that that life is 10% what happens to me and 90% how I react to it…and so it is with you.

IT TAKES A WHILE TO FULFILL SOME PROMISES

I just had a great time. I helped Gwynn, Charrise, and Brenda make 8 big pans (equal to 32 8 x 11 pans) of Sopapilla Cheesecakes. It was really easy and fun have such a capable assembly line going of great Christian women all pulling their own weight! It was good to do something where you were appreciated - that feels so good!! Work is no always that way!!

Tonight right away I am going to give you the recipe for the Turkey Burgers I promised and finally found the copy of the recipe I had on my work computer. I definitely need to forward all of my recipes to my home laptop!!

LIGHT TURKEY-JALAPENO BURGERS

2 Lbs. Ground turkey breast
2 Tablespoons Olive Oil*
2 Cloves fresh garlic, minced or pressed
1 Jalapeno - chopped fine (optional)
1 Tbsp. Light Teriyaki sauce or Soy Sauce
1 Tsp. course ground black pepper (Penzey's!!)
1 Tsp. salt
6 slices Provolone cheese (or cheese of your choice or not)
6 Whole wheat buns

Combine first seven ingredients and form into 6 patties. Spray cold grill with oil and turn on high. Place burgers on hot grill, turning slightly after about three minutes to get good grill marks. Continue to cook until desired doneness- spraying often with apple juice to keep moist! (I do this with most every meat I grill) Just before taking off grill, place slice of cheese on each burger allowing it to begin to melt. Heat buns slightly by wrapping in foil and placing on grill (top rack if possible). Assemble burgers using tomatoes, lettuce, avocado slices, and fresh slices jalapeno, and choice of mustard or light mayo - or condiments of your choice!!

*The Olive oil keeps the burger moist and not tough - this is also a healthy ingredient to add to very lean beef. (See note in blog about Olive Oil!)

Note: This burger was a hit at a family meal. They were surprized to find out it was turkey in the place of beef. Now they ask for Turkey burgers!!!

An extra note about Olive Oil!! I am so bad about thinking you need extra virgin olive oil for everything but I've heard this from two famous Chefs --"You don't need to use the expensive "EVOO" for cooking - the simple Olive Oil is just as good, just as healthy, etc., it just doesn't have the great tastes you find in EVOO!" So join me in taking the hint to not use up my expensive "EVOO" and buy a much less expensive olive oil for cooking!!!

Here is another pie recipe you must try -- it is so delicious and so easy!!

LEMON ICE BOX PIE
JON CAROLE GILBREATH



1 – 8 Oz. pkg. Cream Cheese (ok to use light – but not fat free)
1 Can Eagle Brand Milk or store brand Condensed milk
1/3 Cups fresh lemon juice (about 6 large lemons)
1 tsp. Grated lemon rind
1 Graham Cracker crust

Beat first three ingredients with electric mixer. Pour into crust and chill before serving – several hours or overnight!

DELICIOUS – the fresh lemon juice makes the difference!!!


Here is another one:

MAMAW’S QUICK PINEAPPLE PIES
Jon Carole Gilbreath


1 Can Eagle Brand (I use store brand) Condensed milk
1 –13/1/2 oz. carton Cool Whip
3 Tablespoons lemon juice
2 Small Cans Crush pineapple, drained
2 Graham Cracker crusts

Combine ingredients and pour into crusts and Chill. Makes 2 pies. Serves approx. 16.
Very easy and tasty!


So there you are two more great cool and easy summer pies!! Personally I love the Lemon Ice Box Pie and have to be very disciplined when I am around it!!!

Here is my last little story for you -- one to try and always live by! We would all be happier if we did!

Law of the Garbage Truck

One day I hopped in a taxi and we took off for the airport
We were driving in the right lane when suddenly a black car jumped out of a parking space right in front of us.
My taxi driver slammed on his brakes, skidded, and missed the other car by just inches! The driver of the other car whipped his head around and started yelling at us.
My taxi driver just smiled and waved at the guy. And I mean, he was really friendly.
So I asked, 'Why did you just do that? This guy almost ruined your car and sent us to the hospital!'
This is when my taxi driver taught me what I now call, 'The Law of the Garbage Truck.'

He explained that many people are like garbage trucks. They run around full of garbage, full of frustration, full of anger, and full of disappointment.
As their garbage piles up, they need a place to dump it and sometimes they'll dump it on you. Don't take it personally.

Just smile, wave, wish them well, and move on. Don't take their garbage and spread it to other people at work, at home, or on the streets.

The bottom line is that successful people do not let garbage trucks take over their day. Life's too short to wake up in the morning with regrets,
so ... Love the people who treat you right.
Pray for the ones who don't.

Life is ten percent what you make it and ninety percent how you take it!

SUNDAY NIGHT AND I'VE MISSED YOU!!!

Where have I been the last three nights? Well - Wednesday and Thursday night I was cooking for Travis -- repeating the meal I cooked at Church a couple weeks ago. Thursday was grueling - this was for 80 - and I did not have James and JoAnn cutting up onion, bell pepper, cilantro and anything else I needed. Neither did I have Gwynn helping. Believe me - I appreciate them more now than ever! I think I was just too tired on Friday and Saturday I did not feel well. Travis said most everything was eaten and enjoyed the people at Pine Cove. He said one guy told him "I am going to send my wife to your house for a week and let your wife teach her to cook!"

Oh my - what has happened to Mark - our preacher? His last two Sunday morning sermons have been powerful, thoughtful, sensitive, and delivered with such sincerity. I've most always appreciated his sermons but I told Travis there seemed to be a transformation in him! It was great!!! Thanks Mark!!!

Well on my Facebook page I promised the recipe for Turkey Burgers but I guess that will be tomorrow night because I apparently left the recipe on the printer at work! Duh!! Instead I am going to post the recipe for Chili Rellenos Casserole using turkey.

CHILI RELLENOS CASSEROLE

Cook and drain:

1 lb. ground turkey
1 large onion, chopped
2 cloves garlic, crushed or pressed
3 Tbsp. Williams Chili mix
1 tsp. cumin powder (love this stuff)
Salt to taste or 1 tsp.

Add:
2 (4 oz.)cans chopped green chilies
8 oz. Monterey Jack Cheese, grated
8 oz. Cheddar cheese, grated

Pour into greased 9 X 13 casserole dish.

MIX:

1 large can Evaporated Milk
4 eggs, beaten
2 Tbsp. flour

Pour milk mixture over meat mixture. Mix and spread over top of the milk mixture:

1 8 oz. can tomato sauce
1 tsp. sugar
1 tsp. cumin powder
3 tablespoons Williams Chili mix
Place in a 350 degree oven and bake for 30 to 50 minutes, just until firm. To serve, cut the casserole in squares. Top each serving with sour cream, raisins, and chopped pecans. This serves 8 generously or 10 to 12 small appetites.

As I stated on my Facebook page - I don't usually watch football but I watched the 2010 Hall of Fame inductees last night and it was a great show! Much of it was very moving and all seven men had great accomplishments and great stories. My three favorites Ricky Jackson of the New Orleans Saints and later the San Francisco 49ers.
I don't remember his feats but he thanked God for the honor and gave Him the credit.
Floyd Little of the Denver Broncos sounded more like a great preacher than an athlete. He said he had a message for the young people that might have a dream of what he just accomplished. He said "Get God as your focal point, it will keep you out of trouble - and you will be able to accomplish your dreams - but without Him it would be much tougher!" The third was Emmitt Smith of the Dallas Cowboys. He said he had had a dream since he was 7 years old to be a football star and end up in the Hall of Fame. He said he had worked hard, kept his dream in the front of him and never stopped. He then told the audience that after the championships - he realized he needed God in his life and to set his priorities properly. He also became more attentive to his family. At the end of his speech he thanked God again. Although it was only 3 out of 7 - it was refreshing to three Hall of Fame athletes thank God for their success and talk about Him being the center of their lives.

We all need to be more like these three!!!

Contrary to my first beliefs I am getting excited about our adventurous vacation coming in a couple of weeks -- but mostly I can hardly wait to have a week with Travis and neither working!!!!

I went to the funeral of a beautiful young woman, only 45 years old, and it was very sad. The family had asked some of her friends and relatives to write memorials or rememberances and send them to them. The preacher read probably about 10 of them and each and everyone mentioned remembering her infectious laugh and how it could light up a room! I really hurt for her Mom and Dad, sisters, and husband and children. See - life got her down so bad that she ended her own life and I kept thinking "what happened to the laughter?"

Hope your Monday begins better than my last two have -- and this would be a good week to do some good deeds! Have a blessed night and thank God for your blessings!

TURKEY IS THE FLAVOR OF THE EVENING

Good evening -- actually late night!!! I have been seasoning and wrapping two of the biggest briskets I've ever seen - they won't even fit one of my pans! Got to buy pans tomorrow! No - I am not having a huge party -- but Travis wanted to cook the meal I cooked for Church a couple of weeks ago!! It is best to season, marinate and let sit at least 24 hours in the refrigerator before cooking all night long!! I also am going to make the Crock Pot beans and the peach cobbler. He is cooking for about 80, mostly men -- and I've seen some of them and they apparently heartily!

This is not going to be long but I promised a couple more "Turkey" recipes - so Cathy - this is for you!

TURKEY TENDERLOIN
(Louis Rich - All White Meat)

Marinate over night with Oil Free Kraft Italian Dressing. To do this put in a loaf pan and pour the dressing over the meat. Cover with plastic wrap for a night in the refrigerator. Turn it over the next morning.

To add more flavor -- Cover with a good black pepper and minced or preferable pressed garlic and a little cayenne pepper rubbed on it.

Slow cook on grill (like you would chicken) for approximately 30 minutes or put in a 350 degree over for about 20 to 30 minutes.

Slice and enjoy a very tasty and low calorie meat!


TURKEY SAUCSAGE TURNOVERS

1/2 lb. Turkey sausage
1/2 cup onion, finely chopped
1 to 2 (I would, of course use two)cloves of garlic, either pressed or minced finely
1 Tablespoon all-purpose flour
1 tsp. salt
1/2 tsp. black pepper
1 Tablespoon Dry Sherry or Red Wine
1 -15 oz. Pkg. Pie Crust (the kind you only have to unroll!)
1 egg yolk
1 Tablespoon water
Minced jalapeno (either to taste for a little spice or optionally leave out!)
Paprika

Cook sausage, onion and garlic. Stir until sausage crumbles. (Best to start sausage - let cook a little, then add onion and when it is just about ready to take up - add garlic. You don't want garlic to brown just to distribute its flavor!
Stir in Flour and sherry. Cool. Roll out pie crust until 1/8 inch thick. Cut 3" rounds. Place 1 tsp. sausage mix on each round. Fold over and press edges. Place on baking rack. Brush with a mixture of egg yolk and water. Cut 3 small slits on top of each. Bake at 400 degrees for 12 to 14 minutes. Remove from pan and sprinkle with paprika. Yields 2-1/2 doz.
Great served with Sour Cream (light please!)

NOTE: Pies may be frozen after baked. Then put back in oven at 350 degrees for 5 to 8 minutes. No - don't use microwave --it will make them limp!


And here is one I tried and we loved - and I hate meatloaf:

MEATLOAF IN A MUFFIN TIN - TURKEY MEATLOAVES

1-/2 lbs. turkey ground turkey breast
3/4 cup old-fashioned or quick-cook oats
1 small Red bell pepper
1/2 cup plus 2 tablespoons apple juice* (divided use)
3 tsp. onion powder
2 cloves garlic, minced finely or pressed
1 tsp. salt
1/2 finely minced jalapeno (make substitute sage leaves crushed, if you prefer that flavor!)

Preheat oven to 375 degrees. Spray 12 regular size muffin cups with non-stick cooking spray; set aside. In a medium bowl, mix all ingredients except 2 tablespoons apple juice.
Roll into loose balls and place in mixing cups, mounding tops. Brush tops with remaining apple juice.

Bake 20 to 30 minutes or until thermometer inserted in center of loaf reads 165 F. If you don't have a thermometer - use the old cake method. Stick a toothpick in it to see if it is done or just flake it open a little and use the eye!!! Makes 6 - 2 muffin servings.

* Apple juice may be substituted with white wine! If you use wine - I would suggest brushing tops with olive oil!!

Fun to eat, delicious, and low fat! Calories are only (with apple juice) 210!

Turkey is a great substitute (and healthy substitute for hamburger meat! I have a recipe for Turkey burgers that is pretty awesome too -- the recipe is on my computer at work -- so I will share it later!

EVEN INCONVIENCE CAN PRODUCE FABULOUS MEALS

Good evening! This is going to have to be shhort and sweet and I'm not sure how to do that --I had lots to tell you but time is to be in bed! ha! Me in bed before 10??

I did cook a wonderful meal last night -- Travis informed me he did not want the kitchen heated up -- sounded just like my brother-in-law -- but wonder women can figure out what to do. So - I, not being a wonder woman - but one with more than one resourse decided I could cook outside although I did not want to grill!! So I used my outdoor stove and oven. I baked the chicken (and it was truly delicious -- don't believe me?? Just ask the people who ate it!! Then I also baked the cornbread -- not just plain ol' cornbread -- this had red pepper flakes, garlic, onion,, jalapeno, and corn in it! Have to brag a little -- my small little piece (which to stay on my diet - I should not have eaten)was so delicious!!! Then I boiled the fresh corn I had gotten at Brookshires. I think it was called Colorado Sweet Corn and it was so good and only 25 cents an ear. Not very often we find a bargain like that! Then also -- I did that wonderful Okra, tomatoes and jalapenos that I posted last week I believe. We also had fresh tomatoes and cantalope-- one of the best I have had for the season!! I have something to share that might help us all - and maybe even one - and that alone - would be worth the time and space!!!


THE GINGHAM DRESS . . .
A lady in a faded gingham dress and her husband, dressed in a homespun threadbare suit, stepped off the train in Boston , and walked timidly, without an appointment, into the Harvard University president's outer office.

The secretary could tell in a moment that such backwoods, country hicks had no business at Harvard and probably didn't even deserve to be in Cambridge .

'We'd like to see the president,' the man said softly. 'He'll be busy all day,' the secretary snapped. 'We'll wait,' the lady replied.

For hours the secretary ignored them, hoping that the couple would finally become discouraged and go a way. They didn't, and the secretary grew frustrated and finally decided to disturb the president, even though it was a chore she always regretted.

'Maybe if you see them for a few minutes, they'll leave,' she said to him.

He sighed in exasperation and nodded. Someone of his importance obviously didn't have the time to spend with them, and he detested gingham dresses and homespun suits cluttering up his outer office.

The president, stern faced and with dignity, strutted toward the couple.
The lady told him, 'We had a son who attended Harvard for one year. He loved Harvard. He was happy here. But about a year ago, he was accidentally killed. My husband and I would like to erect a memorial to him, somewhere on campus.'
The president wasn't touched. He was shocked. 'Madam,' he said, gruffly, 'we can't put up a statue for every person who attended Harvard and died. If we did, this place would look like a cemetery.'
'Oh, no,' the lady explained quickly. 'We don't want to erect a statue. We thought we would like to give a building to Harvard.'
The president rolled his eyes. He glanced at the gingham dress and homespun suit, then exclaimed, 'A building! Do you have any earthly idea how much a building costs? We have over seven and a half million dollars in the physical buildings here at Harvard.'
For a moment the lady was silent. The president was pleased. Maybe he could get rid of them now.
The lady turned to her husband and said quietly, 'Is that all it costs to start a university? Why don't we just start our own?'
Her husband nodded. The president's face wilted in confusion and bewilderment. Mr. and Mrs. Leland Stanford got up and walked away, traveling to Palo Alto, California where they established the university that bears their name, Stanford University, a memorial to a son that Harvard no longer cared about.
You can easily judge the character of others by how they treat those who they think can do nothing for them.

Here is your recipe for the evening - try it and ENjoy!! You may already have this as a "staple" in your recipes but if not -- put it there!!

Poppy Seed Cake

1 yellow cake mix (not pudding type)
3/4 cup oil
1/2 cup sugar
8 oz. sour cream (light works just as great!)
2 Tablespoons poppy seed
4 eggs

Mix all ingredients, beating well after each egg is added. Pour into a greased and sugared bundt pan.. Bake at 1 hour. Remove from pan immediately. When cool - dust with powdered sugar . Bake at 350 degrees for 50 to 60 minutes. Remove from pan immediately. Serves 12 plus!!!

I have a great pasta (light and tasty) recipe I will track him down and talk to him!!

SUNDAYS AT SHILOH ARE THE BEST

I love Sundays at Shiloh! The singing is always great - Chuck just knows how to get the best from everyone! The sermon today was one of Mark's best -- I truly believe it came from his heart and his desire to see no one lost!! Then the fellowship is so awesome! I love this place, everyone's desire to serve God through serving others, the sweet, sweet spirit there - and the fact that whatever you do is appreciated and you are not waiting to hear of the next criticism! Thank you God for sending us there!!!

Tonight was the second in a series of lessons Mark is calling "Labs!" He takes a young man and they sit and Mark leads him in a study of Romans about how we are all lost without the blood of Jesus. It is a "lab" to see a real study with someone and show them how although we are all sinners and there is nothing we can do to save ourselves, through faith in Jesus Christ we are saved by God's love and grace. Next week he will follow up with the necessity of baptism to come in contact with God's grace and forgiveness! Great teaching lessons!

This afternoon was a lasy sort of day with Travis and I looking at Texas Monthly's to find articles about the places we will be going to on our vacation! I've decided that if we are to climb a Texas mountain - it will have to be on horseback and then I would feel too sorry for the horses! Riding a glider over them sounds like more fun!

After church tonight we had to make the traditional Sunday night trip to Brookshires! There I saw so many Shiloh members, shared an idea for a quick dessert - have you ever eaten the fresh peaches with fresh blueberries. It is like a burst of sunshine in your mouth! I love it -- and am so thankful Travis cuts up a peach and adds some blueberries for me each morning. I dread having the season come to an end!!! After visiting with several of the members and other people I knew and going from the veggies all the way to the other side to get milk and water - it took a while. Travis said he and Michelle were about to pull a Hank Snow and be "Moving On" and leaving me!!! Hs - ha! Next week he can go spend the $40.00 and see how long it takes him!!!!

I promised on FB that I would give my old recipe version of White Bean Chili - so here is:

WHITE BEAN CHILI

3 Cans Great Northern White Beans
1 Small can chopped green chilies
1 Small onion, chopped
1 lb. Ground turkey breast, browned with onion
1 Can Rotel tomatoes and green Chilies
1 pkg. McKormick's Mild Chili Mix
2 Cloves garlic, minced or pressed

Brown turkey with a little oil (about 2 Tablespoons) in the skillet. Add onion and garlic, saute` slightly. In crock pot or large pot, combine beans, chicken broth, Rotel tomatoes, chopped green chilies, and chili mix. Add browned turkey mixture. Start on high until bubbly and then turn to low (takes 6 to 7 hours in crock pot.) I usually make it in a pot on the stove and it takes about 45 minutes to an hour.

Serve with baked tortilla chips and fat free (or 2% milk) cheddar cheese on top. Calories 155, Fat 2.25 g.

Can't beat this for a great low fat and also delicious dish!!!!!

Here is one of my all time favorite salads. I first had it at Marjoree Glover's house and loved it. She graciously shared her recipe with me and I love making it!!

DOUBLE-DUTY PISTACHIO SALAD
(May be used as a salad with meats, etc. or dessert with cookies or cake!!!!!)

1 small package Instant Pistachio Pudding Mix
1-16 oz. can Chunky pineapple
1-16 oz. can crushed pineapple
1 cup shredded coconut
1 cup chopped pecans
12 or 16 oz. container of Cool Whip
1 cup Minature Marshmallows

Mix both cans pineapple with the juice and sprinkle the pudding on top of it in mixing bowl. Let mixture stand for about 3 minutes and then mix in nuts and coconut, stirring gently. Fold in marshmallows and cool whip. Refrigerate for about 2 hours before serving. It makes 2 bowls of delicous eating and can be frozen!

Try it - you'll love it too!!

Well - typing this recipe has made me hungry for it!!!

One more salad -- an old, old, old salad that I'd forgotten! This one and it is yours for the evening!!

LAYER CHESTNUT SALAD

(BE SURE AND CRISP SALAD GREENS FIRST!)

Layer in order given:

Lettuce
1 Large Onion, ringed
1 Large bell pepper, ringed
1 Can sliced water chestnuts, drained
1 Small can English peas, drained
1 Cup Hellman's mayonnaise
1/8 Cup Parmesan cheese (fresh grated is best!!!)

Seal layered ingredients with mayonnaise. Sprinkle with Parmesan Cheese. Cover with plastic wrap and chill at least 8 hours. Great for get togethers, church socials, or picnics!
