RUSH - RUSH - RUSH - IT IS WORTH THE EFFORT!

It seems Wednesday's are one of the times we rush the most! IT would be so easy to just say "I am too tired!" or "Let's just rest tonight!" or "There won't be anything going on tonight" or "Let's just go eat a good meal and relax!" -- because we get home and by 5:30 - it is rush, rush, rush -- we've got to feed and walk our babies (Schnauzers), Travis has to take a bath, I have to freshen my make-up - then rush to get food (always a problem trying to figure out where we can get something in a hurry and choke it down- and we are always too late to go eat at the church's meal), then go pick up our sweet niece rushing her so we can get there by 7:00. But as we arrive and get out of the car - people are waving and speaking and then inside - it is even more of that. Life gets exciting and then we go to class - and wow - we learn something new - or we get a better perspective on some verse in the Bible or we hear a story that makes you want to reach out to someone! Was the pushing yourself, the rush worth it? - You bet it was!! IF you don't come to class on Wednesday night, you are missing some of the best fellowship there is - and a closeness to Jesus you don't always get on Sundays! Our ladies class was out this week for spring break (our lecturer, Diane Litton is in Peru visiting her family!) so Michelle and I went to Mark's class. IT was very good - they are using a book by Phillip Yancy to study more about Jesus and who he ministered to -- and how we should minister to our community! Jesus did not go in bars and houses of ill repute looking to save them - they came to him either by intent or by God's intervention! Don't we come in contact each day with those who are lost and need a guide?

I think you are probably saying "Ok, this blogs says Jon Carole Cooks! Where are the recipes??" You are right but when something is on my heart - I need to say it. Fresh opens tomorrow -- you should have seen all of the cars there today - representing all of the work going on inside! Can't wait to see it -- but will probably wait a couple of weeks! I am not one that wants to go to anything the first week or two it has opened. Haven't been to BJ's yet - have had good and bad reviews -- guess I will go and decide for myself!

I made a brisket and potato salad for our Sunday lunch at church and had some fabulous feedback on the potato salad, as well as the brisket. My sister wanted to know if I remembered how I made it and I do! So here it is -- the thing about Potato salad - you can change it weekly and it will be just as good or better than the last time you made it. I have found the one thing that makes it better is use Yukon Gold Potatoes. They are a tad more expensive but worth it!

POTATO SALAD

1 - 5 lb. bag Yukon gold potatoes
2 hardboiled eggs, chopped
1 stick butter
1 Tablespoon salt
2 tsps. Penzey's Fresh Ground black pepper
1 tablespoon sugar
1 to 1-1/2 cups Light or fat free Mayo
2 tsps. Penzey's dry mustard
1 tsp. Penzey's cayenne pwd.
1/4 cup sweet pickle relish
1 small jar diced pimentoes
2 tablespoons either apple cider vinegar or Seasoned Rice Vinegar (what I used)
1 Tablespoon Penzey's Fox Point
2 Tablespoons Penzey's Celery seed

Directions:

Peel and cut the potatoes into quarters. Put in large sauce pan and cover with water. Boil until fork tender. Drain - leaving a bit of water in the pan. Add butter and mash potatoes and butter until fairly smooth. Add remaining ingredients and stir until well combined. TASTE AND SEE if it needs more salt or pepper and if it is thin enough. (Remember when it is chilled it stiffens up some) If it seems too dry - add another 1/4th to 1/2 cup mayo. take up in bowl and either serve immediately or cover and place in refrigerator until ready to serve!

(Note -- you can use any brand where I said "PENZEY'S -- that is just the brand I use and love!!! Of course you can cut recipe in half - still use 2 eggs!!)
