WEDNESDAY AGAIN - ONLY TWO MORE DAYS OF WORK - LOTS TO DO!

Didn't make it to church tonight - made dinner and by the time I got the kitchen cleaned up and all the pans, papers, etc., cleared away and I once again loved my kitchen - I was ready to just sit down. Instead I made a cake - one I had not made in years - and the recipe just came back to me - so I made it from memory --and from the way Travis has eaten on it since he got back - no Alzheimer's for me! Thank the good Lord! I hear the rain arriving and wind is really blowing!
I was watching "Power of Prayer" on TV tonight and one of the stories they retold was of Morgan Ashbreck and how the entire vollyball audience came together to pray for her when she dived for a ball and her head hit the floor, causing a convulsion. It is a wonderful story and such an inspiring testamony of teenage girls and their faith and life in Christ. Their open faith in God brought tears to my eyes and I thought "How proud those parents must be!" But in reflection - I am thinking - "How proud God must be of His young children proclaiming their faith for the world to see!" Parents - You are to be commended for raising these girls and girls - always be what you were that night!!!
They also showed a man - Dr.Ted Kimmell, a renounded best seller author who visited Tyler last month. He was talking about the awesome responsibility of raising children and how parents have been given a God given mandate to take their children and connect to their heart. To imprint that heart with a great deal of security, significance and strength so that child can grow up and have an enormously impactful life. He goes on to say "We need to raise kids who have humble hearts. And kids who have grateful hearts. Kids who have generous hearts and kids who have servant hearts." Further he said: "Kids need to see us living out our faith,consistently. Under stress, that's where they need to see it. Because anyone can pull it off at church." He continues by saying, "The only thing graced based parenting is, treating your kids the way God treats His kids." To see more of this article - check out KLTV's Power of Prayer: Dr. Tim Kimmel. I must say I was impressed - and thought of the parents who had raised the girls they showed on the ETCA VOLLEYBALL TEAM!

Tonight I want to share a cake recipe that I made tonight! I used to make it to take to lots of things and then as many things do -- it just faded away kind of like the Strawberry Cake a few weeks ago to be replaced by more exciting recipes - but you know what - it is as good now as it was 10 years ago!

PINEAPPLE CAKE

1 Box white or yellow cake mix
Mix as directed on box -- only please add 1 tsp. vanilla (I prefer Mexican!)
Grease bottom of either glass 9 X 13 or whatever cake pan you use and just before pouring batter into pan - dip out 1 cup batter and add to pineapple topping. Pour remaining batter into dish and bake at 350 degrees for about 25 minutes.

Pineapple topping:
1 large can Crushed pineapple with juice
1 Cup sugar
3/4 stick butter
1 Cup reserved batter
1 tsp. vanilla
Combine in saucepan and cook on medium high oven until bubbly and thickened. BE SURE AND STIR -- I DIDN'T STIR SOON ENOUGH AND HAD A FEW SCORCHED PIECES! But it is still very good!!

While cake is hot - punch holes with fork - and pour topping onto cake. Enjoy the raves about this old cake recipe!
